1 Hen - covered in water and 1/2 teaspoon salt

Dough:
3 cups flour
1 teaspoon salt
3 teaspoons baking powder
2 sticks butter (1 cup)
1 1/2 to 1 3/4 cup milk

Directions:
Directions:
1. Cook hen covered in water and 1/2 teaspoon salt to make stock. Cook until chicken is completely done and easily falls apart (about 2 hours).
2. Pull chicken apart.

Dough: Make dough that is between biscuit dough and a pie crust
3. Sift together flour, salt, and baking powder
4. Cut in butter
5. Add milk
6. Roll out thicker than a pie crust.
7. Cut into strips (1 to 2 inches wide)
8. Line sides of casserole dish with crust (NOT the bottom)
9. Dust bottom of pan with flour

All together:
10. Add a layer of chicken pieces and sprinkle with pepper.
11. Add a layer of strips of dough and dust with flour.
12. Add another layer of chicken and sprinkle with pepper.
13. Add warm stock.
14. Dust with butter
15. Place remaining strips of dough on top.
16. Bake at 350º for 30-40 minutes until pastry is golden and chicken is bubbling

To cheat, cook chicken breasts in canned chicken stock (about 4 cans). Cook until chicken comes apart easily and then proceed as above. The hen is a bit richer, but even when using the hen, Libby adds a couple of chicken breasts.
