"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
3 egg whites beaten stiff
Add Alternately:
1 pound Crisco shortening and
2 pounds 10X Confectioner's Sugar (or a little more to make it the proper consistency to spread easy)
Add tsp. salt and
tsp. Vanilla.

This should frost a 2 layer cake and decorate fancy with flowers and other decorations.

Directions:
The secret to the frosting was the length of time it was beaten to make it fluffy and yet firm enough to spread and pass through the decorating tubes.

Personal Notes:
Personal Notes:
Left a widow at 36 years old with 4 active children, Grammie Dailey had to find ways to earn a living, support her family, and never asked for a helping hand. She went to work in a lingerie factory making panties, pajamas, and slips for less than 50 cents an hour. She also cleaned house for families on weekends, and made and decorated birthday and wedding cakes "in her spare time". A traditional 3 tier wedding cake would cost about $35.....something that would cost hundreds of dollars today. She did beautiful decorating, and the frosting was never left uneaten!
