Pizza crust

1-package pizza yeast
¾ cup warm water ( 110 º )
3 ½ cups sifted all- purpose flour
3 ½ tbsp. olive oil
1 tsp. salt

Sauce

1 lb. hot Italian sausage ( to be used as topping )

1-28 oz. can tomatoes
salt and pepper
1-6 oz. package mozzarella cheese, thinly sliced and torn to pieces
2 tbsp. olive oil
1-6 oz. can tomato paste
2 cloves garlic minced
2 tsp. dried oregano leaves, crushed
2 tsp. whole basil
¼ cup grated Parmesan or Romano cheese

Pizza dough

Soften yeast in water. beat in 1 ½ cups flour. Mix in 1 tbsp. olive oil and salt. Stir in remaining flour, knead till smooth and elastic In about 12 minutes it should be firm. Place in lightly grease bowl , turn grease side up, cover and let rise till more than double. In about 1 ½ to 2 hours punch down and cover, then chill.

Cut dough in half on lightly floured surface, roll each half into a 12" circle about ⅛ " thick. Place in two greased 12" pizza pans, forming edges with knuckles, dent dough. Brush dough circles with remaining olive oil. Fill with sauce and sprinkle with cheese.

Bake at 425 º for 20 to 25 minutes

Sauce

Cook sausage in a frying pan until cooked. Drain off the all of the fat. ( Set aside for topping )

Mix all of the ingredients together in a large sauce pan and simmer until all has gone together and sauce is thickened up a little.

Note: sausage can be omitted, you can also use pepperoni if desired.
