1 Lb. Ground beef (extra lean)
1 - 6 oz. cans tomato paste
2 can crushed tomatoes
½ cup chopped onion
1 large clove garlic minced
6 tbsp. snipped parsley
1 tbsp. dried basil leaves crushed
1½ lb. Ricotta cheese ( 3 cups )
⅔ cup grated Romano or Parmesan cheese
2 slightly beaten eggs
10 Manicotti shells
½ cup grated Parmesan cheese
2 tbsp. olive oil
¼ tsp nutmeg

Directions:

Brown beef lightly. drain off fat. Cook onion, garlic, tomato paste, crushed tomatoes, 2 cups water, 2 tbsp. parsley and crushed basil leave, 1 tsp. salt and dash of pepper. Summer uncovered about 30 minutes stirring occasionally.

Meanwhile combine Ricatta cheese, ⅔ cup Parmasan cheese, ¼ tsp nutmeg, eggs, parsley, ½ tsp. salt and dash of pepper.

Cook Manicotte in boiling salted water till tender. Drain and rinse. Use small spoon to stuff Manicotti with cheese mixture.

Pour half sauce in 11 ¾ X 7 ½ X 1 ¾ inch baking dish. arrange manicatti over sauce top with remaining sauce, sprinkle with ½ cup Ramano or Parmasan cheese

Bake at 350 º for 30 to 35 minutes.
