Ingredients: 1½ c flour 1½ sticks butter room temperature 1c chopped nuts 8 oz cream cheese room temperature 1 c sugar 24 oz Cool Whip thawed in refrigerator 1 large box INSTANT pudding (chocolate & butterscotch, are really good)

Directions: |
Directions:Combine flour and butter with pastry blender or a fork Until crumbly Stir in nuts Press into 13 x 9 pan on bottom. Wax paper or parchment work better than bare hands. Make sure it's pressed compactly Bake 375º 10-15 minutes until edges slightly golden. Watch carefully as it will scorch Cool completely
Filling: With hand mixer mix cream cheese and sugar until smooth Fold in 12 oz of Cool Whip. Do not beat Place dollops over top of crust and spread by pressing gently. (If you spread the crust will crumble) Cover crust completely In bowl combine pudding with milk per package directions Allow to thicken then ladle on top of cream cheese mixture to cover. Spread on remainder cool whip. Sprinkle additional nuts over top(optiona)lRefrigerate until served |

Notes: My favorite variation is eliminate pudding layer and substitute sliced fresh strawberries. Do not try to use pudding and strawberries as crust will get mushy This dessert only keeps for a day,especially if you use strawberries. Do not use frozen strawberries-too watery I rarely have any leftovers to worry about
