Roy's Edamame Seasoning

8 oz. Kosher salt
4 oz. Shichimi (Japanese red pepper seasoning)
1 oz. granulated sugar

Directions:
To start this recipe you need to make up this special seasoning. Once made you can have it on hand to make this again and again. Mix ingredients together.
 

Edamame


Ingredients:

1/2 lb. edamame beans, in pods
1 T. Roy's Edamame Seasoning (above)
1/2 tsp. sesame oil

Directions:
Directions:
Boil 7 cups of water in a large pan. Wash edamame bean pods well. Add edamame to boiling water and let boil for 5-10 minutes. Drain the edamame, toss with Roy's Edamame Seasoning and sesame oil. You can serve edamame warm or cooled.

Bill and I first had this on a trip to the Waikoloa Resort in Hawaii. Roy's Restaurant now has two locations in Arizona, so it's a nice night out to sit on the patio watching the sunset for Aloha Hour and enjoy them again. I make them at home too because they are so good and easy to make. Great source of protein, potassium, iron, magnesium and fiber. Also good to munch on cold. Remove from pods before eating.
