½ lb dried black eyed peas
1 c diced bell peppers
¼c chopped pimiento
1 c diced onions
½c finely diced green onions
2 tblsp minced fresh garlic
¼ c. Italian bottled Italian dressing
Salt and pepper to taste

Soak beans overnight
Drain and rinse. In a pit of water bring to boil, reduce to simmer then cover and cook 1 hour until thoroughly cooked.
Drain and rinse
Add remainder of ingredients refrigerate
Serve with crackers or chipsñ
