2 Tbsp. butter
2 Tbsp. flour
1 c. half & half
1/4 tsp nutmeg
1 tsp dry mustard
1/4 tsp worcestershire
1/4 tsp tabasco sauce
2 c. cheese combination of cheddar and 2 others
1 lb. halibut sliced into 2-3 oz pieces
Mayonaisse
Salt and pepper
Fine grated parmesan cheese
Bacon bits
Almond slivers

Preheat over to 350ºF. In small saucepan, melt butter over medium heat. Mix in flour to form a roux. Cook two minutes until smooth and bubbly, stirring constantly. Remove from heat adn add half & half. Return to heat and bring to boil over medium high heat, stirring constantly. Boil and stir one minute. Add remaining ingredients through the Tabasco sauce, then add the cheeses last. Stir until completely blended. Pour into 9 x 13 in pan. Lay halibut into cheese sauce close enough together to form a solid layer. Spread a layer of mayonnaise onto each halibut piece. Season with salt and pepper. Cover entire pan with Parmesan cheese. Sprinkle liberally with bacon bits and almond slivers. Bake until fish is flaky (about 20-30 minutes) Serve directly from pan. 4-6 servings
