2 ½ cups all- purpose flour
½ tsp. soda
½ tsp ground cloves
¾ tsp. ground cinnamon
1 tsp. ground all spice

1 cup strained honey
¾ cup brown suger
1 large egg lightly beaten
1 tbsp. fresh lemon juice
1 tsp. grated lemon rind
½ cup chopped walnuts
¾ cup chopped citron
blanched almonds
candied lemon peel. ( optional)

Sift together the first 5 ingredients and set aside. Mix honey with brown sugar in a sauce pan large enough for mixing cookies. Heat to boiling point, cool, stir in next ingredients. Gradually add flour mixture, blend in chopped nuts and citron. Saving a little of the citron for use as garnish.

Chill dough overnight or until it is stiff enough to roll. Roll to ¼" thickness on a lightly floured board. ( this dough is supposed to be sticky, do not add more flour. ) Shape with 2" cookie cutter. Place on greased cookie sheets, decorate to resemble a daisy by using a dice of citron as the center and strips of almond and candied lemon peel for the petals.
Bake in a preheated oven at 350 º for 10 minutes. Cool and store in airtight container for 3 to 4 days before eating. These cookies improve with age.
Makes 4 ½ dozen.
