2 cups cherries
1½ cups pineapple
1½ cups of raisins ( ½ dark and ½ light )
1 cup pecans
1 cup walnuts
Batter
3 cups flour
1 tsp.baking power
1 tsp. salt
1 tsp. cinnamin
1 tsp. ground allspice
½ tsp. ground nutmeg
½ tsp. ground cloves
1 cup butter
2 cups brown sugar
4 large eggs
¾ cups of orange juice

Directions:
Combine fruits with ⅓ of flour, cream sugar and butter together. Beat eggs, add orange juice and add to creamed mixture, add spices, baking power and salt and mix well. Add fruit mixture and nuts plus remaining flour.
Pour into greased small loaf pans ( 7 3/4 X 3 5/8 X 2 1/4) a little more than one half full.

Bake at 275 º for 2 hours. Check after 1 hour and 15 minutes. Marinate twice one week apart with peach brandy. wrap in cheese cloth and aluminum foil. Makes 4 fruit cakes. Do not make more than a double batch at a time. there is not enough room in the oven to bake them.

To make 8 Fruit Cakes you will need to buy the following amount of candied fruit.

2 - 8 oz. red cherries, 2 - 8 oz. green cherries, 3 - 8 oz. pineapple, 5 oz. light raisins, 5 oz. dark raisins. 2 cups walnuts and 2 cups pecans .
