MAKES 1 LOAF

2 c. Flour
1 tsp. Soda
1 tsp. Baking Powder
½ tsp. Salt
½ c. Shortening
2 Eggs
2 c. Chopped Apples (3 medium)
½ c. Chopped Nuts (optional)
1 tsp. Vanilla


TOPPING (If desired)
¼ c. Sugar
1½ tsp. Cinnamon

Directions:
Directions:
Sift first four ingredients together. Cream shortening and sugar. Add eggs and beat well. Add apples, nuts and vanilla.
Stir in flour mixture. Pour batter into well greased bread pan. Sprinkle with topping if desired. Bake at 350ºF for one hour or until done. Turn pan on side onto cooling rack after removing from oven. Do not slice until cold.
