4 tbsp. Butter
1 Large Onion. thinly sliced
¼ c. Dry Red Wine
½ tsp. Dried Thyme Leaves
2 tsp. Dijon Mustard
1 tsp. prepared White Horseradish
4 Submarine or Grinder Rolls-6 to 7 inches long
1 lb. thinly sliced Rare Roast Beef, at room temperature
½ tsp. Salt
¼ tsp. Pepper
¼ lb. Muenster Cheese, thinly sliced

Preheat broiler, In a medium skillet, heat 1 tablespoon butter. Add onion and cook over medium heat, stirring occasionally, until softened and lightly browned, about 8 minutes. Add wine and thyme, raise heat to high, and boil until wine evaporates, 1 to 2 minutes. Remove onion with a slotted spoon and set aside. Melt remaining 3 tablespoons butter in skillet; remove from heat. Whisk in mustard and horseradish. Slice rolls lengthwise and brush with flavored butter. Place on a baking sheet until lightly browned, about 45 seconds. Divide onion equally over bottom halves of rolls. Top each with roast beef and season with salt and pepper. Lay cheese over meat, return to broiler, and broil about 45 seconds, until cheese is melted. Place tops on sandwiches and serve.
