1½ lb. yellow squash
½ medium onion chopped fine
½ stalk celery chopped
½ bell pepper chopped
½ stick butter
1 tablespoon sugar
2 tablespoons mayonnaise
1 can sliced water chestnuts drained
1 egg, slightly beaten
crushed butter flavored crackers such as Ritz
Grated cheddar cheese

Directions:
Directions:
Wash the squash and slice making 1/4 in medallions. In salted water, barely enough to cover squash, boil sliced squash just till slightly tender and drain well.(Do not over cook the squash) Salute onion, celery and bell pepper in butter. Mix in sugar, mayonnaise and chestnuts. Add egg and stir well. Add squash. Pour in ungreased oblong casserole dish. Cover with crushed crackers and cheese. Bake 30 minutes at 350º.
