1 stick butter
½ cup Crisco
2 cups sugar
4 eggs
3 cups self rising flour
1 cup milk


Sour Cream Icing
24 ounces of coconut
2 cups sugar
16 ounces sour cream

Cake: Divide mixture into 3 greased and floured cake pans and bake at 350° for 20 minutes or until cake cooks away slightly from the sides of the pan. Mama’s tried and true trick to test if cakes are ready is stick a toothpick in the center and if comes out clean it is ready. Another way is, she would pat it gently on top and if it bounces it back, it is ready.
Cool on rack before adding icing. Must be kept in the refrigerator when not serving.

Icing: Mix these ingredients and place in the refrigerator overnight. Spread on the cake after the icing has processed for 24 hours.

Mama always makes great desserts. It has been a tradition, all the children bring food items to a get together because there are so many of us now, around 30, counting young kids. To get to the point, if there are leftovers, as there usually is, we all get something we like. Angela would always like to hide the cake, or say it is terrible! She usually gives it up, but with her own stash already taken. That’s when you know it is a good cake when everyone wants a slice now and one to take home!
