Personal Notes:
I have fond memories of Tapico pudding. My granny and mama made it often when I was growing up. It is such a comfort food. It is nourishing and settling to the stomach. It is one of my father’s favorite. I remember in the summers when Granny made this dessert. She let me stir the egg whites until they become fluffy. I used the hand cranked mixer, no electric. She expressed the importance of following steps or the pudding would not be light and airy. She would place the ingredients in several bowls and place it on racks on the table in front of the air conditioner. She would also cover it with plastic wrap so it would not develop a skin on top. This is an old timey dessert, but one that takes me back to my childhood. Mom still makes it today.
