Ingredients: 3 tablespoons of Tapico mix 2 cups of milk 3 tablespoons of sugar 1 egg white 1 egg yolk ¾ teaspoon of vanilla ⅛ teaspoon of salt

Directions:Mix Tapico, 3 tablespoons of sugar, milk, egg yolk in a saucepan. Let stand for 5 minutes. In a separate bowl beat egg white until foamy. Gradually beat in 2 tablespoons of sugar, beating into soft peaks. Set aside. Cook Tapico mixture over medium heat, stirring constantly until it reaches a full boil for about 6 to 8 minutes. Gradually add beaten egg whites. Stirring quickly just until blended. Stir in vanilla extract and pour into safe containers to cool. The pudding will set up after it cools. |

Notes: I have fond memories of Tapico pudding. My granny and mama made it often when I was growing up. It is such a comfort food. It is nourishing and settling to the stomach. It is one of my father’s favorite. I remember in the summers when Granny made this dessert. She let me stir the egg whites until they become fluffy. I used the hand cranked mixer, no electric. She expressed the importance of following steps or the pudding would not be light and airy. She would place the ingredients in several bowls and place it on racks on the table in front of the air conditioner. She would also cover it with plastic wrap so it would not develop a skin on top. This is an old timey dessert, but one that takes me back to my childhood. Mom still makes it today.
