Biscuits:
1 C flour
2½ t. baking powder
½ t. salt
1 T. butter
1/2 C grated cheese
3 T milk, 3 T water

Wafers
½ C butter
½ C Crisco
½ lb. NY State grated cheese
1 t. salt - a dash of dark red pepper
2 C flour

Cheese Biscuits
mix the biscuit ingredients and roll out as biscuits. Use small can for cutter, like the small Tomato Paste can. Bake 450 º for 10 to 12 minutes

Cheese Wafers:
mix Cheese Wafer ingredients and shape into small balls. Mash each ball down to 1/4 or less with fork.
Cook 375º for 10 minutes.

Nolly says: GG found these two recipes among Momma's recipes. She was always thinking food. I imagine her sitting in the teacher's lounge at Camden Middle School having a smoke and talking food with her lifelong friend Nora West Granade. Maybe they were snacking on Nora's cheese biscuits and Momma asked for and received the recipe and wrote it down with her pencil on the handiest piece of paper available, The Teachers Report of Absences. Natalie perfected the making and GG learned from her and has passed it along to many others.
