10 tbsp. butter, softened
1 c. sugar
Zest of one lemon (1 tbsp.)
1 large egg
1 large egg yolk
2 tbsp. fresh lemon juice
1 tsp. lemon extract
Yellow food coloring
2 c. flour
2 tsp. baking powder
½ tsp. salt
Powdered sugar

Directions:
Cream together butter, sugar and lemon zest. Add in egg, yolk, lemon juice, extract, and desired amount of food coloring.

In a separate bowl, mix together flour, salt and baking powdered. Slowly add dry ingredients to wet ingredients.

Roll 1-1½ inch balls. Roll in powdered sugar until covered.

Bake at 350º for 10-11 minutes or until edges are slightly golden brown.
