1 ½ cups all purpose flour
1 tsp baking powder
½ tsp salt
¾ cup (1.5 sticks) butter
2 cups miniature marshmallows
½ cup sugar
1 egg white
1 tsp vanilla extract
½ tsp almond extract
3 ¾ cups sweetened coconut flakes
Jelly beans, and/or rainbow marshmallows

Directions:

Preheat oven to 375º
Stir together flour, baking powder, and salt-set aside
Microwave the butter, marshmallows on high for 1-1½ minutes or until melted-set aside
Beat sugar, egg white, vanilla extract, almond extract together
Added melted butter and marshmallows to the sugar mixture
Gradually add flour mixture
Beat until blended
Stir in 2 cups coconut
If necessary, chill dough until easy to handle

Shape dough into 1 inch balls
Roll balls in remaining 1 ¾ cups coconut
Place balls in ungreased cookie sheet
Press thumb in center of balls
Bake for 8-10 minutes or until lightly browned
Place 3 jelly beans or marshmallows in each center
Cool completely
