1lb. Jumbo shrimp
2 Tbsp. freshly squeezed lemon juice
2 Tbsp. olive oil
1 Tbsp. minced garlic
¼ tsp. red pepper flakes
¼ c. white wine
2 medium zucchini cut into noodles
Parsley chopped for garnish

Directions:
Directions:
Place a large sauté pan over medium-low heat. Add olive oil and heat for 1 minute. Add garlic and crushed red peppers and cook for 1 minute, stirring constantly.

Add shrimp to pan and cook them, stirring as needed until cooked through and pink on all sides, about 3 minutes. Season shrimp with salt and pepper. Remove shrimp from pan using slotted spoon, transferring to bowl and leaving liquid in pan.

Increase heat to medium. Add white wine and lemon juice. Using wooden spoon, scrape brown bits from bottom of pan, and cook for about 4 minutes. Add zucchini noodles, stirring occasionally, for about 2 minutes. Return shrimp to pan and toss to combine. Season with salt and pepper; garnish with parsley. Serve immediately.

Gluten free. Serves four. Don't over sauté zucchini noodles (just warm) as they get soggy and release a lot of liquid.
