1 large head romaine lettuce, washed
2 medium tomatoes, cut into ½ inch wedges
1 large cucumber, cleaned, sliced 1/8 inch thick
6-8 radishes, trimmed and thinly sliced
4 green onions, cut into 1/4 inch slices
6 oz feta cheese, coarsely crumbled
1 tsp finely chopped fresh mint (about 1/4 teaspoon dried) Can add extra mint
½ cup olive oil
3 tbsps fresh lemon juice
2 Tbsps red wine vinegar
3 cloves garlic, crushed
½ tsp finely chopped fresh oregano (⅛ tsp dried) Can add extra
Can double dressing for extra flavour

Tear lettuce into bite-size pieces, discarding any tough stem ends or discoloured leaves. Place in large salad bowl. Add tomatoes, cucumber, radishes, onions, cheese and olives. Sprinkle with mint. Blend remaining ingredients in small bowl with whisk. Pour over salad; toss slightly till thoroughly mixed. Serve immediately.
