1/2 C hot water
1/4 C butter
salt
1/2 t sugar
1/2 C plus 1 T flour
2 eggs

Directions:
Directions:
Into a saucepan pour 1/2 C hot water over 1/2 C butter and stir until butter is melted. Add pinch of salt, 1/2 t sugar and bring to rapid boil. Add all at once 1/2 C plus 1 T flour, raise saucepan above heat and stir vigorously with a wooden spoon until the paste comes away from the sides of the pan and forms a smooth ball in center. Remove from fire and add 2 eggs, one at a time, beating vigorously after each addition until thick and glossy. Makes 6 large creams puffs or 36 Petit Choux. Onto buttered sheet pan drop paste from tsp in little mounds the size of half a walnut. Bake 400 for 10 min then 300 for 15-20 minutes. Fill with pate de foie gras or any other filling.
