2 med. to lg. Salmon Fillets
2 cups Salt
2 cups Brown Sugar
3-4 Tbsp. Freshly Crushed White Peppercorns
Lots of Dill, chopped

Dill and Mustard Sauce:
6 tsp. Dejon Mustard
4 tsp. Brown Sugar
2 Tbsp. Red Wine Vinegar
4 oz. Vodka
3/4 cup Vegetable Oil
Salt and pepper to taste

Directions:
Directions:
Mix salt, sugar and pepper and add dill. Place fillets parchment paper skin down. Spread ingredients over fillets, cover and place in refrigerator for 24 hours. Rinse well. Slice paper-thin and serve with dill and mustard sauce.

For the Sauce: Whisk together mustard, sugar, vinegar, and vodka. Salt and pepper to taste. Add thin stream of oil stirring constantly. Add dill. Store in refrigerator.
