Ingredients: 2 lbs of Yukon Gold potatoes, peeled, cut into 1- inch pieces; 1 onion, cut into 1-inch pieces; 2 large eggs, 2 tbsp unsalted matzo meal, 1 tsp salt, 1/4 tsp black pepper, 1/4 tsp baking powder, 8 tbsp (or more) vegetable oil, chunky apple sauce.
For chunky applesauce- 3 lbs Golden Delicious apples, peeled, quartered,cored and cut into 3/4 inch pieces, 1 1/2 cups apple juice, 1 1/2 cups fresh or frozen cranberries, 1/2 cup sugar

Directions:Pancakes - Shred potatoes and onions with medium shredding blade of food processor. Transfer mixture to a kitchen towel, wrap tightly and squeeze out as much liquid as possible. Place mixture in a large bowl. Mix in matsa meal, eggs, s & p, and baking powder. Place baking sheet in heated oven. Heat 4 tbsp oil in a heavy large skillet over medium high heat. Drop heaping 1 tbsp potato mixture for each pancake into skillet; flatten to 3 inch diameter. Fry until crisp and golden brown, about 3 minutes per side. Transfer to baking sheet to keep warm and repeat with remaining oil and potato mixture. Serve warm with applesauce. Makes about 24 pancakes.
Chunky applesauce with cranberries - Combine all ingredients in a heavy large saucepan over high heat. Bring to a boil, stirring occasionally. Reduce heat to medium and simmer until apples are very tender and falling apart, about 25 minutes. Cover and chill. Can be made 2 days ahead. |
