1/2 cup mayonnaise
1 large egg, beaten
1 T. Dijon mustard
1 T. Worcestershire sauce
1/2 tsp. hot sauce
1 lb. jumbo lump crab meat
20 saltine crackers, finely crushed
1/4 cup oil
Lemon wedges, for serving

Directions:
Directions:
Whisk together mayonnaise, egg, mustard, Worcestershire sauce, and hot sauce. Toss together crabmeat and cracker crumbs. Gently fold in the mayonnaise mixture. Lightly pack into 8 patties and refrigerate for 2 hours or overnight. In a large skillet heat oil; cook crab cakes over moderately high heat until deep golden brown, about 3 minutes per side. Serve with lemon wedges and favorite sauce such as Lemon Dill, Remoulade or Russian dressing.
