1 c. + 2 T. uncooked oatmeal 1 c. buttermilk 1 T. vanilla 1 c. flour (3/4 whole wheat, 1/4 c. white) 1 T. baking powder 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. soda 1/2 tsp. nutmeg 1/4 c. chopped walnuts 1 egg 3/4 c. brown sugar (or less sugar) 1/4 c. margarine 1 1/2 c. blueberries
Blend the first three ingredients and set aside. Combine dry ingredients plus walnuts. Cream egg, sugar and margarine. Add buttermilk mixture and mix well. Add dry ingredients and stir until just mixed; do not over stir. Fold in blueberries. Bake at 400 degrees 15-20 minutes.
