Cake:
1-1/2 cup corn oil
2 cups sugar
3 large eggs
2 cups flour
1-1/2 cups shredded carrots
2 tsp. baking soda
2 tsp. salt
1 tsp. cinnamon
1 tsp. allspice
1 tsp. vanilla
1 T. cornstarch
3/4 cup chopped macadamia nuts






Frosting:
1 pkg. (8 oz.) cream cheese, softened
3/4 cup butter, softened
2 cups powdered sugar
1/2 tsp. vanilla
1 tsp. lemon juice
Directions:
Directions:
Combine all cake ingredients and mix until blended. Transfer to a greased 13 x 9 inch baking pan. Bake at 350ºF for 45 to 60 minutes or until a toothpick inserted near center comes out clean. Cool completely on wire rack. Cream together cream cheese and butter. Add powdered sugar, vanilla and lemon juice. Beat until light and fluffy. Spread onto cooled cake.

A recipe from the 1970's L.A. Times. It is my understanding that United Airlines served this cake in First Class on flights to Hawaii.
