3 Granny Smith Apples (or other apple types – or other fruit)
1 Tbsp lemon juice
1/2 cup sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
3 eggs
1 tsp vanilla extract
1 cup milk or heavy cream
6 Tbsp melted butter
1/2 cup sugar
1/2 tsp, salt
2/3 cup flour

Directions:
Directions:
Preheat oven to 400º. Butter a 10” pie or cake pan and warm in oven for 5 min. Remove.

1. Peel and slice fruit and put in large Pyrex mixing bowl.
2. Sprinkle with lemon juice. Mix together sugar, cinnamon, nutmeg and stir into fruit mixture.
3. Microwave 4 or 5 minutes to partially cook apples halfway. Set aside.
4. Blend together eggs, vanilla extract, milk or cream in blender.
5. Add sugar, salt, flour to blender mixture. Blend till smooth.
6. Pour half of the batter onto oven warmed pan.
7. Arrange fruit only over batter (reserve juices). Pour rest of batter over fruit.
8. If desired, sprinkle 2 tsp sugar mixed with a little cinnamon over batter.

Bake 25-30 minutes until Clafouti is golden and set in middle. Drizzle with reserved fruit pan juices..

A cla-fou’-tee, a fruit filled batter cake, with the addition of eggs is more custard-like. A specialty of the Limousin region of France, recipes for clafouti use various fruits in season. Use a firm, tart apple or if using a sweeter apple, reduce the sugar a bit. Serve it hot with ice cream or reheat leftovers in the microwave. Bon Appetit!
