2 quarts salted water
1 8-oz. pkg. elbow macaroni
2 T. butter or margarine
1 small onion, minced
1 T. flour
1/2 - 3/4 t. dry mustard
1/8 t. pepper
1 1/2 cups milk
.8 - 1 pound sharp cheddar cheese, grated
extra cheese slices for on top

Cook macaroni in boiling water until tender but firm. Grease a 2qt. baking pan and preheat oven to 350º. Meanwhile, in a 2 qt. saucepan over medium heat, melt butter, add onion and cook until tender, about 5 minutes. Blend in flour, mustard, pepper, and 1 tsp. salt. Stir in milk and cook, stirring constantly, until thickened. Remove from heat and stir in cheese. Place macaroni in baking dish and pour cheese mixture over macaroni. Place cheese slices on top, cover, and bake 20 minutes. When done, turn oven on to broil. Uncover dish and broil until cheese is golden brown.
