4 chicken thighs (bone-in gives more flavor, but boneless is easier)

1/2 c soy sauce

1/2 c ketchup

1/3 c honey

3 cloves garlic (smashed)

fresh ginger- at least 1/2 inch smashed or grated

1 1/2 tsp Siracha or hot sauce (optional)

1. Combine everything in your slowcooker. Cook on low for 6-8 hours. Shred chicken.

2. If you want, add a constarch slurry to thicken the sauce and serve over rice.
