1 (approx.) 4-lb. brisket
1 Tbsp. celery salt
1 Tbsp. garlic salt
1 Tbsp. onion salt
3 Tbsp. liquid smoke
3-4 Tbsp. liquid smoke
3-4 Tbsp. Worcestershire sauce

Directions:
Directions:
Place beef in a huge piece of foil into roasting pan with fat side up
and prick holes in the meat with a sharp cooking fork. Combine the
salts, liquid smoke and Wor. sauce and pour over brisket. Wrap
airtight and marinate at least 3 hours or overnight. Bake meat for 6
hours at 300-325 degrees. First 4 hours bake in foil, 5th hour open foil,
then take brisket out after 5th hour and cool it. (You may let it cool
over night in fridge without opening foil to allow meat to soak up
some of the juices.) Slice with electric knife. Put sliced meat into a
fresh pan without the juice and pour barbecue sauce over it. Put
back into the oven and bake the last hour. Can also be frozen after
5th hour of baking before adding barbecue sauce. To use, thaw,
slice, etc., then pour on barbecue sauce and bake one hour.
