1 box Betty Crocker yellow cake mix (use 3 eggs, ⅓ c. oil, and only 1 c. of water)
1 ½ lbs. confectioner sugar
Juice of 2 lemons (strain juice and grated rind)
Juice of 2 oranges (strain juice and grated rind)
Directions:
Directions:
1. Mix cake according to above directions (3 eggs, ⅓ c. oil and 1 c. water)
2. Drop by teaspoons into Pam coated miniature cupcake pan.
3. Bake at 350º for 10-12 minutes.
4. Combine Confectioner Sugar, juices, and grated rind thoroughly.
5. Remove cooked cakes and hold by the bottom in the sugar/juice mix until coated (let Icing run down sides).

Place on waxed paper to cool. Use a spatula to loosen from Wax Paper.

Makes 5 dozen.
