Zucchini Relish Recipe

10 c peeled, ground zucchini squash
4 c ground onion
5 T salt
2 1/4 c vinegar
2 1/2 c sugar
1 tea nutmeg
1 tea dry mustard
1 tea. tumeric
2 tea celery seed
1 T corn starch
1 red sweet pepper chopped fine
1 green sweet pepper chopped fine
few hot red peppers, ground (optional)

Combine zucchini, onion and salt. Let stand overnight. Drain, Rinse in cold water. Combine with remaining ingredients and cook for 30 minutes (stir a lot because it is real easy to scorch.) Pour into hot sterile jars and cap immediately. Makes about 7 pints.
