Ingredients:  
2 lbs potatoes, chopped how you like them and boiled until almost done, but not done. You substitute 1 (2lb) bag of frozen hashbrowns, thawed.
1 small onion chopped
1 can cream of chicken soup
1 can cream of potato OR cheddar cheese soup
1/2 tsp salt
1/4 tsp pepper
1 (8oz) container sour cream
1/4 cup melted butter
1 3/4 cup milk
1 cup cheddar cheese

Directions:
Directions:
Mix all ingredients thoroughly. Spread evenly into a 9"x13" casserole and bake at 325 degrees F for one hour. Watch closely to prevent over drying and burning. Take out earlier if necessary.
