2 8oz packages cream cheese
1/2 cup sugar
2 eggs
1 tsp vanilla
Comstock Cherry or Blueberry Pie Filling

Preheat oven 350º

1. Beat all ingredients together for 5 minutes until well mixed.

2. Fill mini-muffin pans with liners - 2/3 full.

3. Bake 10-12 minutes at 350º. Cake will not brown. Cool.

4. Top with desired topping: Comstock cherry or blueberry pie filling. Refrigerate..

Makes 60 mini-cheesecakes.
