2 cups sugar
3/4 cup cocoa
1 3/4 cup all purpose flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
1 cup buttermilk
2 eggs
1/2 cup vegetable oil
1/2 cup boiling water
1/2 cup hot, black coffee
2 tsp vanilla extract

Optional:
1/2 package milk chocolate chips OR 1/2-3/4 package melted chocolate chips

Grease and flour cake pan of your choice (a bundt, two 9", or three smaller pans). Preheat oven to 350 degrees F. Stir all dry ingredients together in a large bowl, mixing them to blend well. Add eggs, vanilla, oil and buttermilk. Beat for 2 minutes. Stir in boiling water and coffee. The batter will be very thin. If you choose, add the optional chocolate and mix well. (If you do this, it is more likely that the cake will stick to the pan). Bake until toothpick comes out clean-30 to 35 minutes with no optional chocolate and slightly longer with the added chocolate. Be careful because a chocolate cake can burn without appearing burnt. Wrap in plastic wrap after placing them on plates and let cool in the fridge. You can frost with any icing or frosting you choose.

You can use fillings such as raspberry or strawberry to add in the layers, or fresh fruits. You can also use a crème filling or add almonds. Chocolate goes with everything!!
