Ingredients:  
3 cups cooked chicken (you can use a rotissiere, leftover chicken, or cook some chicken), cut or torn into bite sized pieces.
1 can chipotle peppers in adobe sauce
1/4 cup apple cider vinegar
1 tsp olive oil
1/2 medium onion finely chopped
1 garlic clove, minced or finely chopped
1/2 cup original flavor barbecue sauce


Directions:
Directions:
Cook onions in oil until they are translucent. Add garlic and cook for about one minute more. Add chipotle pepper and adobo sauce, barbeque sauce and vinegar. Cook, stirring occasionally, for 6-8 minutes, or until sauce thickens slightly. Add chicken and cook, stirring frequently for 4-5 minutes, or until chicken is well coated and heated through.
