2 pounds sweet and hot sausage
3 tbsp. olive oil
1 cup chopped onions
3-4 red peppers cut into thin strips
1 cup dry red wine
1 large can plum tomatoes or 5 plum tomatoes
1 cup water
6 cloves garlic
1 tbsp. oregano (I like fresh)
1 tsp thyme (I like fresh)
Salt and pepper
1/2 tsp dried red pepper flakes
2 1/2 tbsp. fennel seeds
1/2 cup chopped, fresh Italian parsley (I leave this out because I hate parsley)
16 oz rotini or rigatoni

Prick sausage links and place in a pot with 1/2 inch water. Let water boil and brown sausage lightly. Drain on paper towel. Add olive oil to pan and cook onions until tender. Add peppers, cooking 5 minutes. Stirring, add wine, tomatoes, water, oregano, thyme, red pepper flakes, salt and pepper. Bring to a boil and reduce heat. Simmer partially covered for 30 minutes. Slice sausage and add to mixture along with fennel. Cook another 20 minutes. Add garlic and cook for 5 minutes. Cook pasta according to package directions and add sauce.
