2 pounds ground beef (plus some salt and pepper to season)
1 cup chopped onions
2 tbsp. oil
1 container mushrooms, sliced how you like them
1 (16 oz) can tomatoes (chopped or whole and you can chop yourself)
2 (6oz) cans tomato paste
2 cups water
2 tsp salt
1 tsp sugar
1 tsp garlic powder (or a few fresh, minced garlic cloves)
1/2 tsp pepper
1 tsp oregano ( I like fresh oregano and often add much more than 1 tsp)
1 tsp basil (same as the oregano....)
8 oz lasagna noodles
16 oz ricotta or cottage cheese (I often use both)
16 oz shredded mozzarella (I often use more)
1 cup parmesan (I often use more)

Directions:
Brown onions in oil in a big pot. Add beef with some salt and pepper to season. Brown beef. Add next ten ingredients. Simmer uncovered for 30 minutes, stirring occasionally. Cook noodles. Mix cheeses together in a bowl. In a casserole dish, layer noodles, sauce and cheese. You should have several layers and end up with cheese on top. Bake at 350 degrees for 40 to 50 minutes OR until light and bubbly,
