4 cups diced fresh or frozen rhubarb, see Note
2-1/2 cups sugar, divided
1 cup mini marshmallows
1/2 cup butter, softened
1 tsp. vanilla
1-3/4 cups flour
3 tsp. baking powder
1/2 tsp. salt
1/2 cup milk

Directions:
Directions:
Combine rhubarb and 1-1/2 cups sugar. Transfer to a greased 11 x 7 inch baking dish. Sprinkle with marshmallows. Cream together butter, vanilla and remaining sugar until light and fluffy. Combine dry ingredients; add to creamed mixture alternately with milk. Beat until just moistened; spoon over rhubarb. Bake at 350ºF for 40 to 45 minutes or until topping is golden brown. Serve warm. Note: If using frozen rhubarb, measure while still frozen, then thaw completely. Drain in a colander, but do not press liquid out.
