1¾ cup cake flour
1 tsp baking powder
¾ tsp baking soda
½ cup of butter or other shortening
1 cup granulated sugar
2 egg yolks, hand beaten
2 egg whites, stiffly beaten
2 squares Bakers unsweetened chocolate, melted
1 cup sour milk or buttermilk
1 tsp vanilla
1 cup of nuts

Frosting:
2 Tbsp butter
1 square bitter chocolate
3 Tbsp evaporated milk
2 cups powdered sugar

Mix cake flour, baking powder and soda; sift together 3 times. Cream butter and sugar until fluffy. Add egg yolks and melted chocolate and beat until creamy. Add sour milk or buttermilk and flour mixture alternately to the butter-sugar mixture, small amounts at a time until smooth. Add vanilla and nuts; mix. Fold in stiffly beaten egg whites. Bake in 3 8-inch layer pans at 350º for 30 minutes.

Melt butter and bitter chocolate. Add evaporated milk. Add powdered sugar slowly. Add more milk, if needed, for a good consistency. Frost cake.
