1 C sugar
1/3 C butter softened
2 eggs
1 1/2 C mashed ripe bananas (3-4 medium)
1/3 C water
1 2/3 C flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 C chopped nuts (optional)

Directions:
Directions:
Heat oven to 350. Grease bottom only of loaf pan or spray. Mix sugar and butter in bowl. Stir in eggs until blended. Add bananas and water beat 30 seconds. Stir in remaining ingredients except nuts until just moistened; stir in nuts. Bake 55-60 minutes or until done. If making mini muffins bake 25 minutes. Makes 1 loaf pan.

This is another recipe from my wonderful friend Judy who is watching from heaven now. It's so moist and freezes well. If you have over ripe bananas I put in the freezer unpeeled in a zip lock baggie and make bread when I get enough.
