18 crackers (saltines)
1⅓ cups water
1½ cup sugar
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 teaspoon cream of tartar

Pastry for double crust pie

Directions:
Directions:
Crumble crackers in a bowl. In a small saucepan, combine sugar, water, lemon juice and spices. Bring to a boil. Pour over crackers. Filling will be thin. Place bottom pastry in a nine inch pie pan. Pour the cracker mixture over the crust. Bake for 10 minutes at 400º.Remove from oven and add the lattice strips of pastry over pie. Seal and flute edges. Bake at 400º for 25-30 minutes or until golden brown.

When my Grandma Little came from Kentucky to stay with us, she would make this pie. All my friends thought that it was so neat not to have apples in an apple pie.
