1 cup (2 cubes) butter
1 cup granulated sugar
1 egg separated
1 tsp almond extract
2 cups sifted all purpose flour
1/2 cup sliced almonds
1 Tbsp sugar
1/2 tsp ground cinnamon or more, if desired.

Directions:

Preheat oven 350°

1. Mix softened butter in food processor.
2. Add sugar gradually until mixture is fluffy and light
3. Add egg yolk and almond extract.
4. Add flour gradually until blended.
5. Spread mixture evenly to edges of a jelly roll pan. 15” x 10” x 1 “
6. Whisk egg white with a fork until foamy white. Spread over top of dough.
7. Sprinkle nuts on top
8. Mix sugar with cinnamon and sprinkle over top.
9. Bake 350° for 25-30 minutes until golden brown.
10. Let cool 5 minutes. Cut approximately 3/8” away from edges to remove brown edges.
11. With a metal ruler or spatula measure and cut into 2” squares.
12. Let cool completely. Store in tin or plastic container or freeze.
13. Will stay fresh in tin or plastic for 3 days. Can freeze for 1 month.

Jan Hagel is a traditional Dutch Christmas Cookie with a scrumptious mix of buttery and flaky delicate shortbread crust coupled with crunchy nuts — traditionally either walnuts or almonds — and crystallized sugar.
