2 tbsp olive oil

1 lb. boneless, skinless chicken breast tenderloins (or chicken breasts) cut into bite sized pieces

1/2 cup chopped onion

1 tsp minced garlic

1 green bell pepper, chopped

1 928 oz) can diced tomatoes (not drained)

1 (8 oz) can tomato sauce

1 tsp salt

1 tbsp chopped fresh basil (or 1 tsp dried basil)

1 1/2 cups instant rice

Directions:

Heat oil in a large skillet over medium high heat. Add chicken, onion and garlic to the skillet. Cook chicken until browned (about 5 minutes)

Stir in bell pepper, tomatoes, tomato sauce, salt, basil and oregano. Bring to a boil.

Stir in rice, cover and remove from heat. Allow the skillet to sit, covered for 5 minutes (or until rice is tender)

Stir and serve immediately

grated Parmesan; additional fresh herbs

NOTE;
If you want to prep ahead, this only requires about 5 mins. of prep work but if you want to save time entirely, you can cut up the chicken in advance and keep it stored in refrigerator. You can also cut up onion, garlic and bell peppers and keep them in your refrigerator. When ready to cook, just follow recipe
