1 pie crust or graham cracker crust

Graham cracker crust:
1 1/2 cups crushed graham crackers
1/3 cup sugar
6 Tablespoons butter, melted


Filling:
6 cups strawberries hulled
1 cup sugar
2 Tablespoons cornstarch
1/2 cup water
1 - 2 drops red food coloring (optional)
1 - 3 ounce package cream cheese
1 teaspoon lemon peel grated

Directions:
In small bowl mash enough berries to measure 1 cup. In a 2 quart saucepan, mix sugar and cornstarch. Gradually stir in 1/2 cup water and mashed berries and food coloring Cook over medium heat stirring constantly until mixture thickens and boils. Boil and stir for one minute; cool.

In medium bowl, beat cream cheese and lemon peel with mixer until smooth. Spread evenly on pie crust. Top with remaining strawberries. Pour cooled strawberry mixture over top. Refrigerate until set, about 3 hours.

Graham cracker crust: Mix ingredients together and press in 9 inch pie pan. Bake 6-8 minutes at 375 degrees F.

Allow at least the 3 hours refrigerator time for this to set up.

Graham crackers are hard to find in the UK so I improvised with using "McVities Tasties Coconut Rings' purchased at the Pound Store. Reduce sugae tp 1 tablespoon and follow recipe.
