1 c onion, chopped
1 c bell pepper, chopped
1 c celery, chopped
2 T garlic, chopped
1 24-oz jar pasta sauce
1 14-oz can diced tomatoes
1 14-oz can tomatoes and chilies
1 7-oz can tomato paste
basil, oregano, salt, and pepper
2 T sugar

Directions:
Directions:
Sauté onion, bell pepper, and celery until softened. Add garlic and cook. Add pasta sauce, tomatoes, and tomato paste and stir well. Season to taste with basil, oregano, salt, pepper, and sugar. Add water if needed.

Gramps simmers with meatballs for spaghetti and meatballs and uses the sauce for Eggplant Parmesan.
