1 1/4 cups sugar

1 cup oil

3eggs

1 tsp lemon rind, grated

1/4 cup lemon juice


1 3/4 cups zucchini, shredded

2 cups flour

1/4 tsp baking powder

2 tsp baking soda

1 tsp salt

1 cup walnuts, chopped (I sub raisins and yes, we like raisins)

icing sugar, sifted

Directions:
Directions:
Combine 1 1/4 cups sugar, oil, eggs, lemon rind, ad lemon juice in a large mixing bowl; mix well. Stir in zucchini.

Combine flour, baking powder, soda and salt; gradually add to zucchini mixture, stirring well. Stir in walnuts or ??. Pour batter into a greased 13 x 9 x 2 inch baking pan.

Bake at 350º for 45 to 50 mins. or until a wooden pick inserted in centre comes out clean. Cool; dust top with sifted icing sugar. Cut into bars.
