1 lb box of mochiko flour (3 cups)
2 1/2 cups sugar
2 tsp baking powder
4 tsp matcha powder
1/4 tsp salt
1 14 oz. can of coconut milk (not lowfat)
1 12 oz. can of evaporated milk
5 large eggs
1 cube butter, melted and slightly cooled

Preheat oven to 350º. Grease a 9" X 13" pan.

1. In large mixing bowl, whisk together mochiko, sugar, baking powder, matcha powder and salt.

2. In separate bowl beat eggs, then add coconut milk, evaporated milk and butter.

3. Carefully pour the wet ingredients over the flour mixture and whisk until smooth and uniform.

4. Pour batter into pan . (I line mine with parchment paper - easier to get out of pan)

Bake for 90 min. until top is golden brown.

Let cool and cut into squares. Can store for three days, covered.
