1 lb. extra lean ground beef
2 Tbsp. olive oil
1 c. coarsely chopped onion
1 c. thinly sliced celery
2-4 Tbsp. minced jalapeno, or mild Chili peppers
2 Tbsp. Chipotle peppers
2 cloves garlic, finely minced
1 can (24.5 oz.) diced tomatoes, un-drained
1 can (12-15 oz.) corn with peppers or corn with okra - drained
1 tsp. Chili powder
½ tsp. salt
Dash or two of pepper
½ tsp. ground cumin
4 medium potatoes, peeled, thinly sliced - about 1 1/2 to 2 pounds
4 c. (16 oz.) shredded sharp cheddar cheese

1. Grease a 13 x 9 x 2 inch baking dish (2 1/2 to 3 quart size).
2. Heat oven to 350º degrees.
3. In a large skillet, heat the olive oil over medium heat. Add ground beef, breaking up, add the onions and celery.
4. Cook stirring until beef is browned and vegetables are tender.
5. Add garlic, peppers and chipotle; cook stirring for about 1 minute longer.
6. Stir in tomatoes, chili powder, salt, pepper, and cumin.
7. In the prepared baking dish, arrange half of the sliced potatoes, then top with half of the corn, ground beef mixture and half of the cheese.
8. Repeat the layers, ending with the remaining cheese.

Cover tightly with foil and bake for about one hour and 15 minutes, or until potatoes are tender.
