whole roasting chicken
herb butter (oregano, flat parsley, rosemary, salt and pepper)
1 orange, sliced
1 red onion sliced
3 bay leaves

Directions:
Directions:
Preheat oven to 425 F. Rinse chicken and pat dry with paper towels. Make herb butter to taste. Gently lift skin of chicken and work herb butter underneath. Butter outside of chicken. Fill cavity with orange and red onion slices and bay leaves. Tie legs to close cavity with skewers or kitchen string. Place chicken breast side down in roasting pan. Don’t cover chicken. Cook for 25 minutes at 425 F. Then lower temperature to 350 to finish. Roast until internal temperature is 165 F.
